SOFRITO

 

What is sofrito? It is simply a compliment almost indispensable for almost all of your cooked dishes. Basically it is almost always the same although at times you can add or delete an ingredient. I will explain how to make it....


We need : a small amount of oil, onion, green pepper, and tomato.

These are the ingredients for the basic sofrito. Although depending on what we are going to cook you can add some ingredient or in certain cases eliminate others.

Method of preparation: Put the oil in a frying pan, dice the onion, pepper and tomato and let fry over low heat for a while. The time depends on what we are going to prepare. If it is for a stew 10 minutes will be enough, in the case of paella it could be as long as 30 minutes depending on the cuantity we are preparing. In any case it should be reduced to about half of thr original quantity.
