Method of preparation
In a sauce pan boil the milk with the cinnamon
stick then allow to cool a little.
In another bowl beat the eggs with 200 grams of
sugar.
Remove the cinnamon stick and carefully add the
milk to the beaten eggs.
Put the rest of the sugar in a small sauce pan
with a tablespoon of water and cook stirring constantly until
tou have a thick dark caramel.
Pour the caramel into a pie dish and move so that
it coats the entire bottom and sides of the dish.
Mix the bread crumbs with the milk and pour into
the pie dish.
Prepare the oven at 350º.
Prepare the pie plate to cook in a water bath.
"baño maría"
Introduce the dish into the oven in the water
bath and cook for 45 minutes..
Remove from the oven and allow to cool, then invert
on a plate to unmold.
Add the ground cinnamon on top to taste.
You can decorate with the whipped cream and cherries.
Advice
To know if the flan is done more than going by
time, the best is to stick a clean knife into the center of
the flan and if it comes out clean it is done
