Method of preparation
Peel and finely dice the onion cut the pepper
into small pieces.
Prepare a frying pan with oil over a low heat
and sauté the onion and peppers for about 10 minutes.
Clean the greens and be sure they are well dried
and add them to the frying pan so that they can cook with the
onion and pepper, keep the heat low and cook for 15 minutes.
Add salt to taste
Place the shrimp into the frying pan and cook
for no more than 3 or 4 minutes.
Finally beat the eggs with a little salt.
Add the beaten eggs to the rest of the ingredients
and stir constantly with a fork, do not let the eggs get too
dry, the dish is much better if the eggs are still moist.
Note,- This dish you can prepare ahead of time
just cooking in the eggs at the time they are to be served.
