1º.- Put a sauce pan of water on to boil.
2º.- When the water begins to boil put in
the eggs. Put them in one by one using a spoon so that they
do not fall to the bottom and break..
3º.- Let them boil for 15 minutes.
After 15 minutes remove them from the sauce pan
and put them under cold water. This will make them easier to
peel.
Once peeled cut them in half lengthwise and remove
the yolk.
In a large bowl put the two cans of tuna, the
pimentos cot in very small pieces, (save some for decoration
later), the egg yolks, and half of the mayonnaise, and half
of the tomato sauce.
Mix all well so it forms a sort of paste. Be sure
to break up the bits of tuna.
Fill the cooked eggs with this mixture and put
them on a serving plate with the stuffing side down.
Finally decorate the upper side with teh
pimentos you have saved and the remaining mayommaise. Pour on
the rest of the tomato sauce to give it some color and make
it look more appetizing.
