Method of preparation
If the peppers are not piquillos you should do the following.
Cut off the top, about a third, and save the top.
Put them with the tops in a pot of boiling water and cook about
five minutes.
If they are piquillos you must only drain them a little.
Finely dice an onion and the parsley.
In a bowl mix the cheeses, eggs onion and parsley, add the
salt and pepper to taste.
Fill the peppers with the mix and place them in a greased oven
safe dish.
Bake in a medium oven for 30 minutes if they are not piquillos
If they are piquillos add a little grated cheese on top and
bake 15 minutes.
