Method of preparation
Peel the zucchini and since they are large we will slice them
in two. Next remove some of the insides and leave a fairly deep
area for the stuffing.
Place the hollowed zucchinis, salted, in the oven for 20 minutes
at 325°F.
Chop the insides of the zucchini tat we removed eariler.
Peel the onion and dice finely.
Prepare a frying pan wwarming the oil, when it has warmed add
the onion, the zucchini, a little salt and cook over high flame
until golden.
When it is golden lower the flame and simmer about 10 minutes.
When the onion and zucchini pulp are well fried, they should
be about one third the original volumn, add the tablespoon of
flour and mix well.
When it is well mixed add the milk, continue to stir until
it thickens and forms a fine mixture.
Remove the zucchini from the oven and put the stuffing into
the hollow.
Finally, place the cheese slices on top and dust with pepper.
Return the zucchini to the oven for five minutes until the
cheese melts.
