Method of preparation
FIRST – WE ARE GOING TO FRY THE CHICKEN
1º Inspect the chicken to be sure it is clean
of feathers and hairs, if you see any merely put it over the
fire and burn them.
2º Divide the chicken into pieces that are
not too small and salt.
3º Put on a frying pan with ½ cup
of oil.
4º When the oil is well heated begin frying
the chicken. (Remember to cover as the oil tends to jump while
frying chicken)
5º Next place the fried pieces of chicken
in a casserole
6º Sprinkle the chicken with the oregano.
Second – WE ARE GOING TO PREPARE THE SOFRITO
FOR THE SAUCE
1º Cut the onion, garlic, the tomatoes, the
pepper, and the carrots into small pieces.
2º In the same pan in which you fried the
chicken put the other ½ cup of oil.
3° When it has heated add all of the chopped
vegetables and allow to fry about 15 minutes over a low flame.
4º When the vegetables are done pour them
over the chicken in the casserole dish.
5º Lastly add the wine and water and the
other teaspoon of salt.
Cook over a low flame for an hour. If lacks
salt to your taste add what you need for your flavor.
