Season the chicken and fry it lightly. Then place it in a clay
casserole, if you do not have one any will serve.
Peel the carrots, the onions, and the garlic and
cot into pieces. (not too small). Place in the casserole dish
with the chicken.
Add the bay leaves, the oregano, the vinegar,
and the water with 1/2 tablespoon of salt.
Place over a low heat for 40 minutes.
You only need wait until it cools. It can be kept
in the refrigerator for several days.
If you serve this with a salad it will be a great
fresh summer meal with very few calories
