This is an excellent desert for any occasion, it is easy to prepare
and can be decorated to give it a very nice look. If you wish,
once it is prepared you can top it with a little whipped cream
in the form of rosettes with a cherry. It will look great.
"Baño María"
The baño Maria simply consists in cooking
by placing the container with the food inside another larger
container filled with water. You only need to place the flan
dish into another dish somewhat larger and fill the larger dish
with water to about an inch from the top edge of the flan dish.
Ingredients for 4
people
2 1/4 cups milk.
5 eggs.
2/3 cup of sugar.

Method of preparation
In a large mixing bowl beat the five eggs. When
you have them well beaten add the milk and the sugar. Set aside
four tablespoons of sugar for the caramel topping. Mix the eggs,
milk, and sugar until the milk has taken the color of the eggs.
In a small saucepan put the four tablespoons of sugar we have
saved. Put this on a very low heat and allow it melt and turn
into caramel. Pour this into a large custard dish (covered is
best) and add the egg mixture. Put this in the baño María
and place the whole thin into the oven at about 350° for
about 40 minutes. At the end of this time remove tit from the
oven and test for doneness
. Do this by inserting a thin bladed knife into the flan and
if it comes out more or less clean the flan has set and is done.
If not return it to the oven for another five or ten minutes.
Once it is done let it stand and cool. Once cool place the custard
dish on a deep plate, then invert the custard dish so the flan
loosens and drops to the plate. There is usually extra liquid
at this point that can be removed with a spoon. At this point
you can decorate the flan or leave it as it is.
