ngredients for 6 portions
1 medium cucumber.
1 medium green pepper.
4 Medium tomatoes.
¼ of a medium onion.
1/2 clove garlic.
1/2 leek. (optional).
20 pit less olives. (optional).
3 tablespoons of oil
Salt.
· Vinegar.
· 2 1/2 cups of water.
Method of preparation:
· Set aside the oil and vinegar.
· Place the rest of the ingredients in
a blender.
· If you do not have a blender you can
use a hand blender but be sure the dish is large and that you
cover it so it does not splash.
· Blend this well until it becomes totally
liquefied.
· If you see it is a little too thick for
your liking you can add a little more water if on the other
hand it is too thin you can add a little bread and continue
blending.
· Add the oil and vinegar .. and taste.
You can add more if you prefer.
The gazpacho should be server very cold, if you
do not have time to refrigerate before serving you can put in
a few ice cubes.
You can also dice cucumber, tomato, bread, onion
and upon serving the soup each one can garnish their own with
these.
As ypu can see it is a very healthy and natural
dish. It is great in the summer and for slimming down a little.
