A special note about weights and measures.
The most accurate method is to use a small kitchen scale
marked in grams and a measuring cup marked in mililiters
and centiliters these can purchased in any store with kitchen
supplies.
500 ml. of milk.
3 eggs.
1 cinnamon stick.
2 teaspoons of ground cinnamon
4 teaspoons of sugar.
1 lemon peel.
Method of preparation
In a sauce pan boil the milk with the cinnamon
stick and the lemon peel.
In a bowl beat the eggs with the sugar
Once the milk has boiled remove the cinnamon stick
and the lemon peel.
Pour the milk into the eggs with the sugar beating
constantly and vigorously.
Divide into 4 dishes that are not too deep.
Cook in a water bath, "baño maría",
in the oven at a temperature of 300º for 20 minutes.
Allow to cool before serving, when you serve them
dust with the ground cinnamon.
