Method of preparation
First clean the whiting, remove the head and the
spine.
Prepare a pot with a large glass of water and a
pinch of salt. In this place the fish head and the spine and allow
to boil over low heat for 15 minutes.
Prepare a casserole that can be put over heat.
Season the fish and place in the dish we have prepared.
Peel the onion and dice finely.
In a frying pan we put the oil and when it has warmed
we add the onion to fry slowly until golden.
When the onion is golden add the crean and pour
over the whiting.
Peel the garlic and crush in a mortar along with
the parsley.
Add to the fish the garlic and parsley with the
fish broth from the head and spine.
Allow to cook over low heat until well done on the
inside. It may take 15 to 20 minutes.
You can serve with shrimp on top and mushrooms as
a garnish.
