1 kilo of potatoes
3 green peppers
1 large onion
2 cloves of garlic
1 cup of oil (Olive oil recommended)
Salt
Peel and wash the potatoes, cut into ¼ inch slices. It
does not matter that they are all the same size.
Cut the peppers in thin strips, cut the onion
in thin slices, and flatten the garlic with hit.
Mix the potatoes, peppers, onion and gaglic and
add salt.
Prepare a large frying pan with the oil, when
it has warmed put all in to fry. The Temperature needs to be
high until the potatoes brown then put the heat as low as possible
ans cook for 10 minutes.
In Andalucía this dish is prepared with
fried eggs and is served as a complete meal, it is delicious.
It can be served as an addition to all kinds
of dishes. It can be made ahead and saved from one day to the
next then reheated in the microwave.
