Method of preparation:
Set aside the oil and vinegar.
Place the rest of the ingredients in a blender.
If you do not have a blender you can use a hand
blender but be sure the dish is large and that you cover it
so it does not splash.
Blend this well until it becomes totally liquefied.
If you see it is a little too thick for your liking
you can add a little more water if on the other hand it is too
thin you can add a little bread and continue blending.
Add the oil and vinegar .. and taste. You can
add more if you prefer.
The gazpacho should be server very cold, if you
do not have time to refrigerate before serving you can put in
a few ice cubes.
You can also dice cucumber, tomato, bread, onion
and upon serving the soup each one can garnish their own with
these.
As ypu can see it is a very healthy and natural
dish. It is great in the summer and for slimming down a little.
